Eating out tendencies among the residents of Ukraine

The majority of the Ukrainians eats at home. Over the past month, 29% of the adult population (48% among people under 40 years) consumed food that was prepared outside the home. Residents of Ukraine prefer "democratic” catering establishments. The leaders are cafe or bistro, which account for two-thirds of recent visits.

In a period of February 10-19 of 2017. Kyiv International Institute of Sociology (KIIS) has conducted its own public opinion poll. Data were collected from 2040 respondents living in 110 settlements (PSU) in all regions of Ukraine (except for AR of Crimea and temporarily occupied parts of Donetsk and Luhansk oblasts) with the method of personal interviewing. The sample was stochastic and is representative of the population of Ukraine aged 18 and above.

In Luhansk and Donetsk oblasts (regions) survey was conducted only in the territories that are controlled by the Ukrainian government. In this survey, the sample covered only the controlled part of Donbas in the same proportion as it was registered for Donbas voters in the last parliamentary elections (October 2014) according to the data of CEC.

 

               Food is an important part of our daily life. The functions of food go far beyond simple life maintenance for a long time already, they exist in touch with culture, health, communication and self-representation, fashion, advertising, architecture and many other spheres of life. The tempo of modern life makes people delegate cooking to professionals and meal outside their homes more and more often.

               The focus of this study was on the Ukrainians` consumption of food outside the home. The following was considered to be food and drinks prepared outside the home:

-       Eating out – dining and drinking outside the home in a restaurant, cafe, bar, canteen, etc.

-       Ordered food/drinks to go – buying the ready-made food in café, supermarkets, from street vendors and in other places (at work, at home, on the street etc.);

-       Food delivery – ready-made food that is delivered by request.

 

Major facts about the eating out practices of the Ukrainians:

  • 29.2% of the adult population ate food that was prepared outside their homes over the past 30 days.

  • The younger are people, the more often they eat out: 54% among those younger than 30. 40% among those of 30-39 y.o., 33% among those of 40-49 y.o., further this share continues to decrease.

  • Men under 40 eat out 1.5 times more often than women of the same age.

  • With the increase in the number of people in a particular settlement, the share of those who eat out increases as well. However, this difference (see Graph 1) appeared not that significant: while in the village one in a five eats out, in the city it is one in a three.

  • Among the residents of the Central and Western Ukraine, the share of those who eat out is bigger than among the residents of the East and South of the country.

  • The residents of Ukraine prefer “democratic” catering establishments. Among the leaders, there are café or bistro, that service two third of all recent visits. It is also popular to eat in canteens and buffets at the places of work or studying (23% of the recent visits), and buying ready-made food in the streets.

  • Eating out is unevenly distributed during the day. Over the past month eating out took place mostly at lunch (19%).

  • 19% of the respondents report that they lunch outside the home, and 18% also had snacks during the day. Less people (13%) do not cook food at home in the evening. The least popular is having breakfast out since only 8% of the respondents ate this way.


Note, that data were collected in winter, and it is possible that in spring we will observe the season changes in this sphere.
